- 3 tbsp. sugar
- 3 fresh egg yolks
- 1.25 dl Marsala wine
- 1 organic orange ', rinsed with hot water, dabbed dry
In a thin-sided bowl, combine the sugar, egg yolks and orange peel. Pour in the Marsala. Suspend the bowl over the simmering bain marie, it must not touch the water. Using the whisk attachment on a hand mixer, beat for approx. 4 mins., until the zabaione is frothy and traces form when it is stirred. Remove the bowl, briefly continue beating, serving immediately.
