Food Scout: Discovering authentic, hand-crafted tofu - made near Zurich
Having lived in Japan for a while, Amy Eber occasionally craves Japanese comfort food. To her amazement she finds a Swiss tofu producer in Zwillikon, near Zurich. The small co-operative makes tofu by hand using traditional Japanese methods. Amy describes the step-by-step production process and her favorite kind:
