Food Scout: Rolling creamy Capuns in Graubünden
Food scout Amy Eber visits Chur in canton Graubünden to sample Capuns, the rich, hearty and delicious regional delicacy. This classic dish is made by rolling a pasta dough-like filling—containing flour, eggs, chives, parsley, chopped air-dried sausage or dried meats—in boiled Swiss chard leaves. Once the packets are formed (and often sauteed in butter) they are simmered in a sauce made from cream and meat broth:
